The Kid(s) Behind The Blog

Thought I’d link up for this fun monthly interview I came across on Laurie’s blog today! It was so much fun πŸ™‚

\\What do you enjoy doing with Mommy and Daddy?
Mia: “We make hearts. Play with you and Daddy. We like to play duck duck duck goose. ”Β Have to ask Mike about this, I have not played this with her lolΒ

\\Name one thing you are really good at?
Mia: “I’m good like I want to go up in the sky. I like to color…”Β Oh good lord what does that first part mean?!Β

\\What is one thing that Mommy and Daddy tell you often? Mia: “When you’re bad you’re going to a time out” We have never tried the time out thing so that is odd.. When asked again “Throw it! baseball.”Β Again odd but has been said for sure

\\What do you want to be when you grow up? Mia: “Rose! ”Β This girl is obbbsseed with Sleeping Beauty! I’m more of a Belle girl myself Β but loved Sleeping Beauty when I was her age too because it’s my Dad’s fave Disney movie.Β

\\What do you think Mommy and Daddy do when you go to bed at night?
Mia: “Sing! Umm read books!”Β We do sing to her at night. I can’t count how many requests I’ve had for let it go or love is an open door. Too many that’s for sure. Ha We also read her a bijillion books before bed each night.Β

Joaquim only has a handful of words to work with so his responses were more screeches or “yeah yeah yeah!” or “Mama” lol but here’s a pic just the same:)

Our Pretty Little Girls

Brigadeiros ~ Brazilian Chocolate Truffles

If you like chocolate, you will adore brigadeiros. These little truffles are a must at any party in Brazil. From children’s birthdays to wedding showers brigadeiros are pretty much expected. Mike and I even had them as favors at our wedding! They are super easy to make and I even recently discovered you can make them in the microwave! What?! This makes it dangerously easy.

  • 1 14 oz can sweetened condensed milk
  • 2Β tbsp butter
  • 2Β tbsp cocoa powder
  • chocolate sprinkles
  • paper truffle cups
  1. Put condensed milk, butter and cocoa powder in a pan and cook at low heat.
  2. Stir constantly, until thick where you can see the bottom of the pan.
  3. Pour into buttered flat plate and let cool.
  4. Scoop 1/2 a teaspoon of the brigadeiro mixture and roll into a truffle ball with your hands . {to prevent chocolate from sticking to your hands make sure it is cool and butter you hands to grease them slightly}
  5. Roll truffle in chocolate sprinkles.
  6. Place truffle in paper cups.

Microwave version

1.Mix condensed milk, butter and cocoa powder in microwave safe bowl.

2. Heat at 80% power in 2 minute intervals for a total of 6 minutes, stirring well each interval.

3. Follow steps 3-6 of regular brigadeiro recipe.

And here are some random shots of them at my kids’ birthday parties, there has not been one birthday sans brigadeiros so far!

And for fun, and because I can’t resist a chance to share pics from our wedding… they were in the little pink boxes on the tables shown in this pic:

Easy Banana Pudding

Processed with VSCOcam with t1 preset

Last night I made banana pudding for dessert. I had been craving it for months and finally gave in. I love a dessert that is not only yummy but also easy to make and banana pudding is exactly that! If you need to make a dessert for a party and don’t have a lot of time this is a great one. It’s quick to make and looks really pretty in a clear trifile dish.

  • One large pkg vanilla instant pudding (5.1 oz)
  • One small pkg banana cream instant pudding
  • 2 and 3/4 cup milk
  • 1 14 oz can sweetened condensed milk
  • 1 16oz container of cool whip
  • 4 bananas sliced
  • one box of vanilla wafers
  1. In a large mixing bowl mix the entire pkg of vanilla instant pudding mix with 1 1/2 oz of the banana cream instant pudding mix until well blended.
  2. Add milk and whisk until almost set.
  3. Add can of sweetened condensed milk and mix until well blended.
  4. Add 1/2 of the cool whip and mix until well blended.
  5. In your trifile dish set an even layer of vanilla wafers.
  6. Pour a layer of the pudding mixture over the wafers.
  7. Set an even layer of banana slices over the pudding.
  8. Keep alternating layers until you run out of the ppuddingΒ Β mixture.
  9. Pour the last of the cool whip over the trifile. And spread evenly to cover entire trifile.
  10. Crumple a few wafers with your hands and sprinkle over whipped cream.
  11. Put in refrigerator for at least 1 hour before serving.

Mike requested chocolate chips with his tonight, there’s lots of ways you could mix this recipe up with different puddings and fruits.. Gotta love versatility!
