Cheddar Bay Biscuits With a Twist

I’ve always been a fan of cheddar bay biscuits and have tried several copy cat versions attempting to find just the right combination of ingredients. I think I finally got it right but this time I did not have any sharp cheddar in the house; so I used what we had which was mozz and parm and it turned out delish! Totally different vibe to it but a tasty biscuit just the same. These go great with soups and stews so I thought I’d share the recipe on this chilly snowy day!

INGREDIENTS (Makes about 9 biscuits)BISCUITS:
2 1/2 cup Bisquick baking mix
4 tbsp cold Butter
1 cup Mozzarella and Parmesan cheese mixture, grated
3/4 cup cold Milk
1/8 tsp Garlic Powder

TOPPING:
1/4 cup Butter, melted
1/2 tsp Garlic Powder
1/4 tsp Dried Parsley Flakes
pinch Salt

DIRECTIONS
Preheat oven to 425.
Combine Bisquick and cold butter. Don’t over mix, leave pea size pieces.
Add cheese, milk and 1/8 tsp garlic.
Mix by hand until combined, again don’t over mix.
Drop 9 equal portions onto lined or greased cookie sheet.
Bake for 14-17 minutes or until tops are lightly browned.
Melt butter in a bowl.
Stir in garlic powder and parsley flakes.
Spread garlic butter on top of biscuits.
